Title.

So is the human braindead or is it another player whose controls the rat player is able to take over? In the latter case, is the human able to remove their hat?

I imagine the human would be brain dead, much like the Humanized geneticist monkies. The rat can leave the hat and wander around, and while that happens the human will basically go SSD with an absent minded stare, maybe they'll snap out of it soon. If the rat were to take the hat off, the rat would still be on the hair, but people would be able to see that the chef is infact controlled by a rat.
