Some of it is arguing with them, but most of it is setting an example by eating delicious vegan food in front of them, showing them it's possible and easy even for someone who enjoys fancy food as much as I do

By doing so as quickly and painlessly as possible after it has lived a life relatively free of hardship. It is all relative of course but I find this to be entirely acceptable. Maybe i am a sociopath.

It's really impossible to say, but I've found more exposure to vegan arguments makes people more likely to go vegan. If the opposite is true you weren't going to change their mind by not saying anything anyway were you, so no loss.

The farmer has an incentive to kill them earlier, which is not really based on an ethical decision but on profit. Does a short life with a violent death really make the result ethical?

It's not just about what you're willing to pay, it's worse for the environment, more resource intensive and unsustainable on a scale big enough to serve everyone.
